Tasty Taco Soup Recipe
1/2 cup finely chopped onion
1/2 cup chopped celery
4 cans (14-1/2 ounces each) tomatoes with liquid (I use Del Monte Stewed Tomatoes, Mexican Recipe)
1 can (8 ounces) tomato sauce
1/2 cup salsa (I use mild or medium)
1 package taco seasoning mix
1-1/2 lbs. lean ground beef
2 cans (14 ounces each) kidney beans, with liquid (yes)
1 can (17 ounces) corn, with liquid (yes)
Grated cheddar cheese
Saute celery and onion together in a little butter. Add ground beef and cook until browned.
Drain any excess fat. Combine celery, onion, beef, and remaining ingredients except cheese in a kettle.
Simmer 1-2 hours. If I feel like more liquid is needed, Ill add more canned tomatoes or chicken broth
(or turkey broth if I have any in the freezer).
To serve, ladle into bowls and top with grated cheese.
