Really Good Pumpkin Soup Recipe

This pumpkin soup recipe really is a tasty hearty soup! Pumpkins are another healthy Fruit! Yes pumpkins are actually a fruit not a vegetable. It’s a member of the Cucurbita family.

Pumpkins have lots of vitamins and minerals like iron, zinc, and fiber. To name a few. They also are filled with antioxidants! Who doesn’t love antioxidants?!

So enjoy making and eating this soup for all kinds of reasons!


4 cups chicken stock- low sodium
1 tsp. salt
2 2/3 cups pumpkin puree
3/4 tsp fresh parsley chopped
2/3 cup onion- chopped
1/4 tsp. fresh thyme- chopped
2/3 clove garlic- minced
1/3 cup heavy whipping cream
3 1/4 whole black peppercorns


Serves 6
In a large pot, heat chicken stock, salt, pumpkin, onion, thyme, garlic, and peppercorns. Bring to a boil and reduce heat to a simmer for 30 minutes.

With an immerse blender blend soup to puree. Bring soup to a boil then reduce heat to a simmer for 30 minutes. Stir in cream. Serve with fresh parsley on top for garnish.
