Hearty Sausage Soup Recipe
When the beans are added it gives the soup a real hearty texture. A chunky soup! With great tasty vegetables on top of everything makes this soup a keeper!
1 pound Italian sausage-cut up
1 clove garlic- minced
2 14 ounce cansbeef broth
1 14.5 ounce canItalian-style stewed tomatoes
1 cup carrots- sliced
1 medium potatoes- cubed
1/4 tsp ground black pepper
1/4 tsp salt
1 14.5 ounce cannorthern beans
2 small zucchini- cubed
2 cups spinach – packed,rinsed and torn
In a large pot, brown together sausage and garlic. Add broth, tomatoes carrots, potatoes and season with salt and pepper. Bring to a boil then reduce heat to a simmer for 15 minutes; covered
Stir in beans and zucchini. Cover and bring back to a simmer andcontinue for 15 minutes; covered.
Remove from heat and add spinach. Cover the soup and let set until spinach is wilted. Enjoy!
