Garlic Chicken Soup Recipe
INGREDIENTS:
- 3-1/2 cups home-made chicken broth
- 1 head garlic (about 15 cloves)
- 1 medium onion, quartered
- 1 tsp. each fresh mint and basil, minced
- 1/2 tsp. red pepper flakes
- salt, to taste
- 1 Tbsp. fresh lemon juice
DIRECTIONS:
Put all ingredients, except lemon juice, into a pot and bring to a boil. Reduce heat, simmer 30 minutes. Puree garlic, onions and herbs with a little broth, return to pot. Add lemon juice. For a clear broth, do not puree solids – strain them out. Makes about 3 1/2 cups.
