Frozen Pea Soup Recipe

Not only will you be surprised at how easy this soup is to make, you will be amazed at how much flavor the peas give to the soup. This is one of my favorite ways to get my vegetable quota!


4 cups frozen peas
Enough water to cover the peas
Salt and pepper to taste
Chopped fresh basil or dried basil to taste


1. Combine all the ingredients and bring to a boil. If using fresh basil, leave it aside until the final step.

2. Reduce the heat, and allow to simmer until the peas are tender but not mushy. This should take no more than 5 minutes.

3. If using fresh basil, add it now. Remove soup from heat, and mix with an immersion blender or stand-up blender.


Basil is not the only herb that I use in this recipe; sometimes I use mint, other times sage. I also like to add shredded lettuce if I have it on hand. Treat this soup as a starting point, and add anything that will blend well without a lot of cooking involved, and you will end up with lots of interesting variations. Also, if you are not strictly vegetarian you can add a little butter or cream for richness, but frozen pea soup is so good as it is that you really don’t need the dairy. Nigella Lawson has a terrific recipe that involves using pesto, which of course contains basil – but it also contains Parmesan cheese.

Tips and Tricks

For a little more savory “depth”, you can add some sauteed onions or leeks. Just make sure they are cooked well enough that they will blend, as five minutes cooking time from a raw state will leave them too hard to blend in.
