Czech Creamed Potato Soup Recipe
- 1 ¼ lb Potatoes, peeled, cubed
- ½ c Onion, chopped
- 3 oz Root vegetables, (parsnip or turnips) chopped
- 3 Tablespoons of butter or Shortening
- 1/4 cup of Flour
- 6 cups of Water
- 3 oz Mushrooms, fresh
- 1 Garlic clove, crushed
- 1 pinch Marjoram
- Sour cream
- Parsley, chopped
Fry root vegetables in the shortening. Sprinkle with flour and fry until golden brown. Cover with cold water, stir well. Add mushrooms and potatoes, boil for about 20 minutes.
Set aside a cup of the potatoes and root vegetables. Blend everything else. Finally, add garlic, salt, the cup of potatoes and root vegetables, marjoram and reheat. Garnish with chopped parsley and sour cream as desired.
