Curried Celery Soup Recipe


I have found that celery helps to reduce blood pressure as it contains an active component called Pthalides.
It also is a good source of vitamin C. It can provide a good source of fibre in a diet and some essential minerals such as Folacin and Potassium.

This recipe for Celery soup is what I call one of my basic soup recipes.
I am developing a base soup recipe that can then be altered with additions to the recipe and altering the garnish, so that this can become a useful standby and it will freeze well.

INGREDIENTS:

4 onions chopped fine
1 bunch of celery separated,washed,scrub with a nail brush if it has soil on it and cut into small slices.
4 potatoes washed and diced into small 1/2 inch cubes or similar
1 1/2 pints of stock chicken, vegetable, cube or homemade
salt and pepper
olive oil

DIRECTIONS:

Put the 2 tablespoons of olive oil into a pan and heat on a medium heat.
Add the onions and fry gently for 5 minutes.
Add extra olive oil about 1 tablespoon.
Add the potatoes and fry for about 5 minutes.
Add the celery and fry for about 5 minutes.
Add the stock and bring to the boil.
Turn heat down and simmer until the food is soft about 20 minutes.
Remember to put the pan lid on.
Use a pressure cooker if you have one to economise on fuel.
When it is all cooked taste and season with salt and pepper.
Put all the soup into a blender .
If you prefer a chunky soup only blend half.
The soup is ready to serve.

Variations

1. Add 2 tablespoons of Madras curry powder for Curried celery soup. Add the curry powder with the onions and fry to let out the essential oils of flavour. This is the recipe for Curried Celery Soup.

2. The recipe for Leek and celery soup is the above with the addition of 4 leeks washed and sliced and add after the onions.

3. For Celery soup with Cider add1/4 pint of cider to the soup after blending and reheat gently but do not boil.,garnish with celery leaves and fresh apples peeled , cored and diced.

4. For Cream of Celery soup add 1/2 pint of fresh cream after blending and reheat gently. If you prefer you can add creme fraiche or just stir in a swirl of natural yogurt before serving.

5. For Celery and Rice soup, add 1 cup of cooked rice after blending and reheat.

6. For Celery and Herbs soup add one of these fresh chopped herbs as a garnish, sage, tarragon, coriander and parsley. Also add 1/4 cup of the chopped herbs to the soup before serving.

7. For Celery and Pea soup, add fresh peas and chopped fresh mint as a garnish.

8. Add garlic to the soup with the onions at the start of cooking.

9. For more vegetables add chopped parsnip and chopped carrots at the start of cooking.
