Creamy Brocoli Soup with Salmon Recipe
INGREDIENTS:
- 1 onion, chopped
- 3 tablespoons of olive oil
- 3/4 lbs. of brocoli crowns
- 1 cube of vegetable stock (Knorr)
- 1/2 cup of heavy cream
- 1/2 lbs. salmon, cut in small pieces
- salt and pepper to taste
DIRECTIONS:
Fry the chooped onion ina large pot with the olive oil for about 3 minutes. Cut the brocoli crowns in smaller pieces and add them to the onions and fry for another 3 minutes. Add 4 cups of water to the pot and bring to a boil. Add the vegetable bouillon cube. Cook for 5 minutes.
Now take your stick blender and blend the soup, but not too finely. You can also use a regular blender for this. Now add the heavy cream and reheat, not letting it come to a boil however. Cook for 2 minutes. In the last minute add the salmon and cook for another minute. Add salt and pepper to taste.
