Creamy Asparagus Soup Recipe
INGREDIENTS:
- 2 cans of chicken broth
- 3 cups water
- 1/2 cup of milk
- 1/2 cup of heavy cream or sour cream
- 1 cup diced leek
- 1 cup diced carrot
- 1 cup diced celery
- 1 tbls salt
- 2 lb Asparagus
- (cut into 1” pieces)
DIRECTIONS:
Place ingredients except milk and cream into stock pot and simmer 30 minutes. Set aside 1/2 cup of asparagus pieces. Place everything else in blender, puree or use a stick blender.
Now mix in the milk and cream and blend it again. Add the leftover asparagus pieces. Season with salt to taste.
