Albondiga Soup Recipe
1 cup brown rice
6 cups of water
1 lb lean ground turkey
1/2 cup chopped onions
2 cups cubed potatoes, bite-size
1/4 cup tomato sauce
6 tsp chicken bouillon
1 tbsp garlic powder
6 carb balance whole wheat totillas
Prepare brown rice first as directed on package.
In large stockpot boil the water
Make meatballs with turkey and half of the prepared rice. bite-size.
Place meatballs in boiling water, along with onions, potatoes tomato sauce, chicken bouillon and garlic powder.
Cook until meatballs and potatoes are cooked completely.
Warm the tortillas on griddle.
Serve soup with tortilla rolled up for dipping.
